The price of eggs has skyrocketed from a year ago. What’s up with that? People are spending over $12 for a dozen eggs in some parts of America, that a year ago was less than two dollars. In Europe, especially the UK, people have had to keep all domestic fowls contained and away from potential contact with birds (wild) for at least 3 months now because of the Avian Flu. Why was it not the same elsewhere?

I have heard a woman on the new say she will still buy eggs because of how necessary it is. She said she would not be able to make chicken cutlets without it and that eggs are in most things we eat . The news reporter agreed.

True, the prices of everything that contains eggs have gone up so in addition to not buying eggs, you have to consider your ability to do without or tolerate the rise in things such as mayonnaise and other condiments, baked sweets, and frozen items. As of this moment, I am refusing to buy eggs until the price drops back to what is reasonable in the face of scarcity.

The kids and I have already decided we are not going to fall prey to this current economic “supply chain crisis” that is going on, and we have added eggs to the list of demands that will no longer control our household budget. I wish there was something I could do to help myself but unfortunately, I live in a subdivision and they do not allow keeping chickens (or a garden, or anything else to help one to be a little more self-sufficient in some area) else I would have had some already to supplement my family’s diet.

Although it might seem insurmountable, one can live without anything containing eggs, and be satisfied. Here are some ideas. Bake without eggs. This is nothing new. There are numerous recipes on the internet showing you how with awesome results. Go completely vegan. I used to be vegan and it was not hard to eat a balanced diet as there are loads of substitutions for everything you are used to eating. And really no substitutions are needed. Just make sure you are getting the right amount of protein. Reconsider what you think of as breakfast. Does it really have to include eggs? Of course not. Refashion some of your favourite dishes and leave the eggs out or find a substitute. It will be fine. I have made chicken cutlets sans eggs many times. I think they were tasty.

The bottom line is that we should not give in to consumerism. I am sure that there is an egg crisis. Sure there is a problem, but I do not think it is justifiable that the cost of 1 dozen eggs should be quadrupled in one year. We already know there is a lot of unjustifiable greed taking place so this is just part of that epidemic. I will not sanction greed by buying eggs at such a ridiculously high price.
